Pineapple

Baked Pineapple
Ingredients:

1 can of whole pineapple in its juice

2 tablespoons of honey
-
1 tablespoon of butter
Instructions:

Preheat the oven to 180°C (350°F).

Place the whole pineapple in an oven-safe dish.
-
Drizzle the honey over the pineapple and add small pieces of butter on top.
-
Bake for 20-25 minutes, or until the pineapple is golden and caramelized.

Serve hot and enjoy as a dessert or side dish.
Pineapple and Chicken Salad
Ingredients:

1 can of pineapple chunks in juice
-
1 cooked and shredded chicken breast
-
1/4 cup of mayonnaise
-
1/4 cup of plain yogurt
-
1 teaspoon of Dijon mustard
-
Salt and pepper to taste
-
Lettuce (optional, for serving)
Instructions:

In a large bowl, mix the mayonnaise, yogurt, and Dijon mustard until well combined.

Add the pineapple chunks (previously drained), shredded chicken breast, and mix well.
-
Season the mixture with salt and pepper to taste, and mix again.
-
Optionally, serve over lettuce leaves for a fresher presentation.

Serve the pineapple and chicken salad as a main dish or as a filling for sandwiches or wraps.


Grilled Pineapple
Ingredients:

1 can of pineapple slices in juice
-
1 tablespoon of coconut oil (or vegetable oil)
-
1 teaspoon of cinnamon powder (optional)
Instructions:

Preheat the grill to medium heat.
-
Drain the pineapple slices and pat them dry with paper towels.
-
Brush both sides of the pineapple slices with coconut oil.
-
Optionally, sprinkle some cinnamon powder over the slices.
-
Place the pineapple slices on the hot grill and cook for 2-3 minutes on each side, or until lightly golden.
