Pineapple

Piña al horno

Baked Pineapple

Ingredients:

  • 1 can of whole pineapple in its juice

  • 2 tablespoons of honey

  • 1 tablespoon of butter

Instructions:

  1. Preheat the oven to 180°C (350°F).

  2. Place the whole pineapple in an oven-safe dish.

  3. Drizzle the honey over the pineapple and add small pieces of butter on top.

  4. Bake for 20-25 minutes, or until the pineapple is golden and caramelized.

  5. Serve hot and enjoy as a dessert or side dish.

Pineapple and Chicken Salad

Ingredients:

  • 1 can of pineapple chunks in juice

  • 1 cooked and shredded chicken breast

  • 1/4 cup of mayonnaise

  • 1/4 cup of plain yogurt

  • 1 teaspoon of Dijon mustard

  • Salt and pepper to taste

  • Lettuce (optional, for serving)

Instructions:

  1. In a large bowl, mix the mayonnaise, yogurt, and Dijon mustard until well combined.

  2. Add the pineapple chunks (previously drained), shredded chicken breast, and mix well.

  3. Season the mixture with salt and pepper to taste, and mix again.

  4. Optionally, serve over lettuce leaves for a fresher presentation.

  5. Serve the pineapple and chicken salad as a main dish or as a filling for sandwiches or wraps.

Ensalada de piña y pollo
Piña a la parrilla con canela

Grilled Pineapple

Ingredients:

  • 1 can of pineapple slices in juice

  • 1 tablespoon of coconut oil (or vegetable oil)

  • 1 teaspoon of cinnamon powder (optional)

Instructions:

  1. Preheat the grill to medium heat.

  2. Drain the pineapple slices and pat them dry with paper towels.

  3. Brush both sides of the pineapple slices with coconut oil.

  4. Optionally, sprinkle some cinnamon powder over the slices.

  5. Place the pineapple slices on the hot grill and cook for 2-3 minutes on each side, or until lightly golden.
