Hearts of Palm

Hearts of Palm Empanadas
Ingredients:

1 can of canned Palmitos
-
3 cups of all-purpose flour
-
6 ounces of cold butter, diced

1 egg
-
½ teaspoon of salt
-
4 tablespoons of cold water
-
¼ cup of finely chopped green olives
-
½ cup of shredded fresh cheese
-
Salt and pepper to taste
Instructions:
-
Prepare the dough with flour and salt. Add butter and mix until it resembles coarse crumbs. Add the egg and water, one teaspoon at a time until the mixture is moistened.

Cover with plastic wrap and refrigerate for at least 30 minutes.

While the dough rests in the refrigerator, prepare the filling. Combine the canned Palmitos with the olives and shredded cheese and mix well. Season with salt and pepper to taste.

Preheat the oven to 200°C (400°F).

Remove the dough from the refrigerator. Using a rolling pin, on a flat and clean surface, roll out the dough to a thickness of ¼ inch. Cut it into medium-sized discs.

Place 2 tablespoons of filling in the center of each disc. Seal the edges with a fork. Refrigerate the empanadas for 10 minutes before baking (to firm up the butter and achieve a lighter dough).

Place the empanadas on a baking sheet and bake for 20-25 minutes until golden brown. Let them cool slightly and enjoy!
Vegan Ceviche
Ingredients:

1 can of 800 g whole Palmitos.
-
2 Tomatoes
-
1 Red onion
-
1/4 cup of chopped cilantro
-
1 chili pepper or locoto (optional)
-
½ cup of olive oil
-
Pepper and salt to taste
Instructions:

Drain the Palmitos and chop them into small pieces.

Dice the tomatoes.
-
Slice the onion into julienne strips or small pieces.
-
Chop the cilantro
-
In a glass dish, add the chopped Palmitos, diced tomatoes, sliced onion, and cilantro. Gently stir while adding the lemon juice and olive oil. Adding the chili pepper or locoto is optional.

Hearts of Palm and Tuna Salad
Ingredients:
-
500 g of canned Palmitos (1 can)
-
1 avocado
-
1 lettuce
-
4 tomatoes
-
3 garlic cloves
-
1 lemon
-
1 pinch of salt and pepper
-
½ splash of vinegar
Instructions:
-
Mix the Palmitos, lettuce, tomatoes, and garlic. (finely chop the garlic, cut the tomatoes into small wedges, and slice the Palmitos)
-
Add the lemon juice. Then add the avocado, also cut into small wedges.
-
Season with salt, pepper, and vinegar.
-
Add the can of tuna and mix.
