Quinoa

Quinoa and Cheese
Balls
Ingredients:
-
1 can of cooked quinoa
-
1 egg
-
1/2 cup of grated cheese (you can use mozzarella, cheddar, or any cheese of your choice)
-
2 tablespoons of breadcrumbs
-
1 teaspoon of Italian seasoning (optional)
-
Salt and pepper to taste
-
Oil for frying (optional)
Instructions:

In a large bowl, mix the cooked quinoa, egg, grated cheese, breadcrumbs, Italian seasoning (if using), salt, and pepper.

Form balls with the quinoa and cheese mixture.

Optionally, heat some oil in a non-stick skillet over medium heat.
-
Place the balls in the hot skillet and cook until golden brown on all sides.

Remove from the heat and serve hot as an appetizer or side dish.
Quinoa and Veggie
Salad
Ingredients:

1 can of cooked quinoa
-
1 tomato, diced
-
1 cucumber, diced
-
1/4 cup of red onion, chopped
-
2 tablespoons of fresh cilantro, chopped
-
Juice of 1 lemon
-
2 tablespoons of olive oil
-
Salt and pepper to taste
-
1 broccoli
Instructions:

In a large bowl, mix the cooked quinoa, tomato, broccoli, cucumber, red onion, and cilantro.

In a small bowl, mix the lemon juice, olive oil, salt, and pepper to make the dressing.
-
Pour the dressing over the quinoa salad and mix well.

Serve cold as a side dish or main course.

Pineapple and Curry
Quinoa
Ingredients:

1 can of cooked quinoa
-
1 can of pineapple chunks in juice
-
1 tablespoon of coconut oil (or vegetable oil)
-
1 tablespoon of yellow curry paste
-
Salt to taste
-
Fresh chopped cilantro for garnish (optional)
Instructions:

Drain the pineapple and reserve the juice.

Heat the coconut oil in a large skillet over medium heat.

Add the yellow curry paste to the skillet and sauté for 1 minute.
-
Add the cooked quinoa and pineapple chunks to the skillet, mixing well to coat the quinoa with the curry.

Add a bit of the reserved pineapple juice for moisture and flavor.

Cook for a few minutes until heated through.

Taste and adjust salt as needed.

Serve hot, garnished with fresh cilantro if desired.
